Prepping: Scallions

Scallions can be conveniently separated into two main parts: the vibrant green tops and the white or pale green stems below. Each of these components possesses distinct flavors and textures, contributing uniquely to culinary creations.


The tender and delicate tops provide a fresh, mildly grassy taste, perfect for garnishing and adding vibrant color to dishes. Conversely, the stems possess a stronger onion flavor, delivering a satisfying crunch and depth when cooked. Preparing ingredients often sparks creativity, leading to innovative methods of utilizing various parts of food to maximize their use.



Ingredients and equipment

  • 6 to 8 pieces of scallions

  • A sharp steel knife or a ceramic knife

  • Plastic storage containers





Steps

  1. Wash the scallions if necessary.

  2. Let the scallions air dry before prepping them.

  3. Start from the top (the green portion) and dice them until reaching the stems. (See video for more details.)

  4. Cut off the roots from the stems.  (See video for more details.)

  5. Cut the stems in half.  (See video for more details.)

  6. Slice the stems vertically.  (See video for more details.)

  7. Store the stems and the tops in separate containers.

  8. Use the tops within 5 days.

  9. Use the stems for up to 2 weeks.


Afterthoughts


Scallions, often referred to as green onions or spring onions, are highly versatile aromatics that significantly enhance the flavor and texture of numerous dishes. Their distinct taste, which is milder than regular onions, adds a pleasant zest and freshness that can elevate both simple and complex recipes.


The shelf life of scallions varies significantly between their two parts. The green tops generally last only a few days in the refrigerator, usually around three to five days, before they start wilting and losing their bright color. This short lifespan highlights the need to use them soon after buying or preparing.


On the other hand, the white stems at the base can stay fresh for a much longer time, often up to two weeks if stored correctly. This prolonged shelf life makes scallions a convenient ingredient to have on hand, as they can be added to various dishes over time. This distinction can increase the shelf life of scallions, enabling their use in multiple meals and reducing food waste.


To maintain the freshness of scallions and ensure they are ready for use, wash, trim, and store them properly in advance. This approach not only saves time during cooking but also improves the quality of meals, making home cooking more appealing. Preparing ingredients ahead of time automates several steps, guaranteeing a steady supply of ingredients. Additionally, it streamlines ingredient selection since each component can be utilized in various dishes.
