Prepping whole broccoli

A entire head of broccoli

Preparing broccoli couldn't be simpler. Prepping broccoli in advance is the way to go, as it allows you to have broccoli available whenever you need it. Moreover, prepping ahead significantly extends its shelf life, often lasting up to 2 weeks. This post shows how to prep broccoli for stir-frying and to ensure maximum shelf life. You'll end up eating more broccoli with this method.

  • Look for the broccoli without yellowing of the florets, which is an indication of lack of freshness.

  • Check the stem of the broccoli to make sure that there are not cracks or holes in the stem. They are also indications of the broccoli has passed its prime.

Additional Information

Sesame oil holds a distinguished position in the culinary world, renowned for its unique role as a finishing touch in cooking, much like a guest who arrives just in time for dessert. Derived from toasted sesame seeds, the production process of sesame oil is so unique it could be featured in its own reality show.

Its origins trace back to the time of Confucius, who imparted his moral and ethical teachings 2,500 years ago. Today, sesame oil continues to be a vital component in the pursuit of flavor, enabling chefs from diverse regions to showcase it in their traditional dishes.

The process starts with toasting the sesame seeds, similar to a revitalizing spa treatment, where they are gently warmed to enhance their natural flavor and aroma. This toasting not only highlights the seeds' rich, nutty essence but also readies them for the crucial next step in oil extraction. After this enhancement, the oil is extracted using the cold press method, known for maintaining the oil's nutritional quality and integrity.

This process involves meticulously crushing the seeds, which, though it may sound dramatic, essentially means they are embraced by a machine specifically designed for this task. The cold pressing technique ensures the oil is extracted without heat, preserving its delicate flavors and health benefits. Consequently, the oil maintains its vibrant color, rich taste, and nutritional richness, making it a valued ingredient in various culinary applications and a staple in health-conscious diets.

In addition to the oil, numerous chemical compounds are extracted from sesame seeds. These compounds contribute to the oil's distinctive flavor, which is so unique it could likely have its own following. Some people appreciate this flavor, while others find it less appealing, affecting the natural taste of food ingredients.

These same compounds also lower the smoking point of sesame oil, indicating it is not ideal for frying or stir-frying. However, sesame oil is renowned for its culinary expertise and ability to transcend culinary traditions and boundaries.
