Fried rice with sweet corn and scallions

Add frozen sweet corn to fried rice

Ingredients (serving for 2)

  • Large eggs -3 (beaten)

  • Cooked jasmine rice that has been stored in the refrigerator for 24 hours or longer - 3 cups

  • Frozen sweet corn (harvested by our neighbor last fall) - 1 cup

  • Scallions (top green portion, see prep video in Lesson 4 on prepping scallions) - 1/4 cup

  • Canola oil - 2 tablespoons (or any oil of your preference)

  • Wok with Tak Basic Seasoning Mix - 2 tablespoons







Steps


Adding scallions to fried rice
  1. Heat the wok over high heat until it is preheated.

  2. Add 2 tablespoons of canola oil to the wok.

  3. Heat the oil until it reaches a gentle smoking point.

  4. Reduce the heat and let the oil gently smoke for about 15 seconds (see the recipe video for more details).

  5. Return the heat to high.

  6. Introduce the eggs into the wok.

  7. Use the wok spatula to move the cooked egg towards the center of the wok.

  8. Break the cooked eggs into large pieces as desired.

  9. Incorporate 3 cups of cooked jasmine rice.

  10. Utilize the ground meat masher to break up the rice (refer to the video for more details).

  11. Add the Wok with Tak Seasoning Mix.

  12. Stir-fry until most of the rice grains no longer clump.

  13. Add the sweet corn to the wok. (Thaw the sweet corn and drain off excess water.)

  14. Introduce the scallions to the wok.

  15. Thoroughly stir-fry the ingredients (watch the videos for more details).

  16. Adjust the flavor with additional Wok with Tak Seasoning Mix to your preference.

  17. The total cooking time should be approximately 7 minutes.
