Ingredients (serving for 2)
5 jumbo shrimp with EZ peel shell, defrosted and peeled
2 cups of fresh green beans cut into 1 to 2-inch lengths
2 tablespoons of canola oil
2 tablespoons of cornstarch to create a cornstarch/water suspension of 1:3 ratio
2 tablespoons of oyster sauce, or to taste

Steps
Blanch the green beans (refer to this video for more information).
Heat the wok on high.
Add 2 tablespoons of cooking oil to the hot wok.
Heat the oil until it begins to lightly smoke.
Lower the heat and let the oil smoke gently for about 15 seconds (see the video in Lesson 3 on spot seasoning for further details).
Increase the heat back to high.
Place the blanched green beans in the wok.
Add shrimp to the wok.
Stir-fry for approximately 30 seconds until the shrimp appears to be about halfway cooked.
Pour oyster sauce over the shrimp and green beans.
Stir for roughly 10 seconds.
Lower the heat.
Pour most of the cornstarch and water mixture into the wok.
Adjust the gravy's thickness by adding hot water (see video for guidance).
Enhance the flavor with more oyster sauce if needed.
The dish is ready to serve.
